Healthy Collard Green Tacos

I am a big fan of lettuce wraps, so when I was scrubbing a bushel of collard greens the other day, I couldn’t help but notice that they are absolutely perfect for tacos. They fold in the right place, have a sturdy, fleshy body to it so it can hold lots of goods, and taste-wise complements whatever you stuff in there. Ladies and Gentlemen, I present to you Collard Green Tacos!

These are healthy, lean, nutrient-packed and absolutely delicious!

Here’s what you need!

Collard Green Tacos
Makes 4 Tacos at 374 Calories Each

  • 12 oz of lean ground grass-fed beef
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon Herbes de Provence
  • 1 red onion, diced
  • 1 teaspoon coconut oil
  • 4 large collard green leafs
  • 1 cup of halved cherry tomatoes
  • 1/2 cup green onions, sliced
  • 1/2 cup of low-fat ricotta cheese, crumbled
  • 1 cup of orange peppers, diced
  • 1 avocado, diced
  • 1 cup salsa

Rinse your leaves and trim the stem. In a medium skillet, heat your oil over medium heat and add your red onion. Sauté until translucent, then add your beef and spices and herbs and brown your meat. Place all ingredients into an assembly station so that your family can fill their own and partake in the dinner prep. Take your leaf, add your meat, then cheddar cheese, tomatoes, salsa, orange peppers, green onions and top with a few avocado chunks and some ricotta cheese sprinkles.
